Ingredients
Cooking spray
3 1/2 pounds sweet potatoes (about 5 medium), peeled and cut into 1-inch chunks
1/3 cup honey
1 large egg
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
Kosher salt
1 tablespoon packed dark brown sugar
1/3 cup finely chopped pecans
Directions
Preheat the oven to 350 degrees F. Mist an 8-inch square baking dish with cooking spray.

Bring a few inches of water to a boil in a pot with a large steamer basket in place. Put the sweet potatoes in the basket, cover and steam until tender, 20 to 25 minutes. Well we returned from visiting family in Salt Lake City to find a nice, thin veneer of the white stuff on the lawn and driveway. So the termination dust has made its way down to terminate what was a really great summer. The weather cooperated nicely for all outside activities. I hope you feel the same.

Just a note: We remembered to take our mowers in for a tune up around April, but sometimes that snow blower gets left for years without any similar attention. That is the case around here as Dave checked the oil in the little red beast before we left and it is coal black and the consistency of his coffee. It weighs about twice what the mower does, he will have to wait for our son Chris to help him get it into the Jeep but it IS going to the shop! Last…

Apple does it again! Here is a great article from BusinessInsider.com on Apple's plans for their new headquarters. It is so nice to see a company as massive as Apple to look towards a greener Planet.

Apple CEO Tim Cook spoke at New York City's Climate Week on Monday where he proclaimed that Apple's new "spaceship" headquarters would be "the greenest building on the planet," according to 9to5Mac's Zac Hall.

“We’re building a new headquarters that will, I think, be the greenest building on the planet," Cook said about the building, which is under construction. "It’ll be a center for innovation, and it’s something clearly our employees want and we want."

The building should open at the end of 2016.

The number is $1,884. That's the amount of this year's Permanent Fund dividend as announced by Gov. Sean Parnell on Wednesday in downtown Anchorage.

"I'm frankly grateful for the Permanent Fund dividend at whatever amount, and I know Alaskans are too, as they save it or spend it for their own needs," Parnell said.

The governor made the announcement in a small conference room at the Atwood building in front of a crowd of dozens of media and about 100 state employees.

DRIVE IN MOVIE

The Alaska Airlines Center is excited to bring back the nostalgia of the drive-in movie with the style of the 21st century. Starting at 5:00pm, a rodeo of local food trucks will be located in the parking lot of the arena for your dining pleasure. At sundown (approximately 9pm), we will watch Jurassic Park. Sound will be broadcasted through FM radio, as well as speakers for those that are planning to join on foot. Food trucks and vendors will be serving throughout the movie.

Grilled Garlic Parmesan Zucchini

 

Ingredients (Makes 4 servings):

3 zucchini

3 tablespoons of butter, softened

3 cloves of garlic, minced

1 tablespoon chopped fresh parsley

1/2 cup freshly grated Parmesan cheese

Directions:

  1. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  2. Cut the zucchini in half crosswise, then slice each half into 3 slices lengthwise, making 6 slices per zucchini.
  3. Mix the butter, garlic, and parsley in a bowl, and spread the mixture on both sides of each zucchini slice. Sprinkle one side of each slice with Parmesan cheese, and place the slices, cheese sides up, crosswise on the preheated grill to keep them from falling through.

I found this great delicious recipe on thegardengrazer.com website and had to share...yummmmmm!

Ingredients
Large head of romaine
15 oz. can black beans, rinsed and drained
1 large orange bell pepper
1 pint cherry tomatoes
2 cups corn (I used frozen, thawed)
5 green onions
Optional: avocado

{For the dressing} 
1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 cup plain vegan yogurt (or avocado or Greek yogurt, etc.)
2 Tbsp. fresh lime juice (about 1/2 lime), more to taste
1-2 garlic cloves
1/4 cup olive oil
1 1/2 tsp. white wine vinegar
1/8 tsp. salt
Recommended: agave/honey, cumin
