I found this great delicious recipe on thegardengrazer.com website and had to share...yummmmmm!

Ingredients
Large head of romaine
15 oz. can black beans, rinsed and drained
1 large orange bell pepper
1 pint cherry tomatoes
2 cups corn (I used frozen, thawed)
5 green onions
Optional: avocado

{For the dressing} 
1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 cup plain vegan yogurt (or avocado or Greek yogurt, etc.)
2 Tbsp. fresh lime juice (about 1/2 lime), more to taste
1-2 garlic cloves
1/4 cup olive oil
1 1/2 tsp. white wine vinegar
1/8 tsp. salt
Recommended: agave/honey, cumin

Directions
Make the dressing: puree all ingredients in a food processor/blender until smooth. Taste and adjust seasonings if necessary.

Shadow: STOP THE PRESSES! JUST IN: NOOK HAS TRANSISIONED! Yes it seems Nook (the Stallion of a husky) has just gotten into the limo.

Just for the record, (and mom always wants this to be made clear), Rudy and I are speaking from the Rainbow Bridge in the spirit world. Actually, Rudy is usually off playing with the cows so I often write his stuff in. Also here are Alcu, Rex and Pixie. And now NOOK has at last joined us. We have watched him everyday since Dave started taking care of him over two years ago. I am so excited to be taking part in this annual event. The Alaska Heart Run is the largest 5K race in Alaska. Shadow: Well Dad is off on another trip to see his folks in California. HIS Dad is quite sick and his Mom needs his help. So Dad leaves our Mom in charge of the house while he’s gone. I used to miss him when he would leave for a few days, but Mom does a real good job, and he’s home before we knew it.

Rudy: I slept when Dad was home and I slept when he was away. Didn’t real see any difference. Yeah we didn’t move around as much with Mom, you know “do your business and back into the kennel” but guess what: I slept in the kennel too. I mean it’s a big as a car so we could all sleep. Shadow would stand guard and we all would sleep. It was great.

Red Lobster Cheddar Bay Biscuits

I wish we had a Red Lobster here in Anchorage, AK. So what is the next best thing? Replicating their famous cheddar bay biscuits! I found this great recipe on Food.com and was pleasantly surprised.

Prep Time: 20 mins          Cook Time: 20 mins          Yield: 9 Biscuits

Ingredients

    • 2 1/2 cups Bisquick baking mix
    • 4 tablespoons cold butter
    • 1 cup sharp cheddar cheese, grated
    • 3/4 cup cold whole milk
    • 1/4 teaspoon garlic powder

Brush on top

    • 2 tablespoons butter, melted
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon dried parsley flakes
    • 1 pinch salt

I pulled out my atlas the other day and looked up “Anchorage.” I was checking to see exactly where it was located. It IS the site of the Fur Rondy. It IS the area where the Iditarod, (at least ceremoniously) begins every year. I concluded that Anchorage is indeed IN Alaska! Now that I had solved that quandary, I wondered what did I really know of Alaska. It’s cold. Yet today in February the therometer says “35 degrees F!” Now that’s not cold; not for Alaska. So I looked around for the snow. Alaska surely has snow. And there it was, all of two months old; Snow…and green grass. Green grass in February. This couldn’t be Alaska.
But there it was right on the map. Snow. So I went down to see where the world famous Iditarod Sled Dog Race would start only to be…
